This is one in a series of really easy gluten-free snacks and meals that you can make. Today’s is about a snack or an hors d’oeuvre that is so simple and so good.
All you need are rice crackers, big, little, thick, thin – whatever size you like. Next, goat cheese. While I like the spreadable goat cheese, I have discovered a gouda-like goat cheese that cuts like a piece of hard cheese. It’s so good that my 12 year old fussy eater love it too! Finally, jam. The first time I tried this was with fig jam, a surprising favorite in our house with our teenage kids. The second time I used homemade raspberry jam made using wild raspberries that showed up in our garden.
All you do is spread a little of your favorite jam onto a rice cracker. You can see from the pictures that I used what I had in the house – large rice crackers. Then slice goat cheese and put it on top of the jam. Spread a little more jam on top of the goat cheese if you like.
This is a delicious and easy snack. If you use small or thin rice crackers, or cut the big ones up into bite sized pieces and slice the cheese in thin pieces it would be a great party snack.
