UNBELIEVABLE INGREDIENTS!

Last weekend we had a nice dinner with family for Mother’s Day.  I bought the kids Doritos and my sister-in-law read the ingredients out loud.  When’s the last time you read the ingredients?  Check it out:   whole corn, vegetable oil (corn, soybean and/or sunflower), salt, cheddar cheese, maltodextrin, wheat flour, whey, monosodium Glutamate (MSG), buttermilk solids, romano cheese from cow’s milk, whey protein concentrate, onion powder, partially hydrogenated soybean and cottonseed oil, corn flour, disodium phosphate, lactose, natural and artifical flavor, dextrose, tomato powder, spices, lactic acid, artifical color including yellow 6, yello 5, red 40, citric acid, sugar, garlic powder, red and green bell pepper powder, sodium caseinate, disodium inosinate, disodium guanylate, nonfat milk solids, when protein isolate and corn syrup solids.  That’s A LOT of ingredients and lots of artificial stuff. 

During the week I purchased a bag of Terra Sweet Potato & Beets Chips.  The ingredients in them are: A blend of sweet potatoes and beets, canola oil and/or safflower oil and/or sunflower oil.

So let’s see, that’s 40 ingredients including artificial colors and ingredients in the Doritos, and 3-5 ingredients and no artificial ingredients or colors in the sweet potato and beet chips, which by the way, were delicious.  My kids and I especially liked the beet chips!

EZ Chicken Dishes

We like to eat dinner as a family and take every opportunity to do so.  It’s gotten harder based on everyone’s schedules.   Tonight was one of those nights that we sat down for dinner together.

Tonight I made all natural chicken apple sausages.  We discovered these chicken sausages and tried several different sweet and savory flavors.  Our favorite is the chicken apple sausage.  It’s sweet and savory at the same time, and very easy to make.

All you do is put a little olive oil in a pan, put the chicken sausages into the pan, cover it and cook over medium heat for 10-12 minutes, more or less.  I turn them 3-4 times to get them evenly cooked.

I also made my baked barbeque chicken.  The sauce combines with the chicken juices and is so juicy and delicious.  I baked the chicken at 350 degrees for about 40 minutes.

Add in steamed broccoli and rice and voila a delicious, gluten-free, allergy-free dinner.   A nice variety that everyone enjoyed.  My 11 year old daughter loves the sausages.  My 17 year old son thanked me and took both types of chicken and a lot of broccoli as did my husband. So a great dinner that was very easy to make.

EZ Gluten-Free, Allergy-Free Fish Recipe

Tonight I made cod fillets for the family.  First I soaked them in egg.  You can substitute another liquid for egg if you’d like.  By the way, even though I am allergic to eggs as long as they are baked into a product I can eat them.  For this recipe the eggs binds the bread crumbs to the fish, and there’s so little egg that it doesn’t seem to bother me.

I then coated two of the three fish fillets with gluten-free bread crumbs.  Next I cooked them on the stovetop in a pan with a little bit of olive oil and onions.  I cooked them for about 5 minutes a side until done.

Because the rest of my family is not gluten free I made the third and biggest cod fillet for my husband and son using “regular” bread crumbs at their request.  A different pan, different utensils, etc.

Prior to preparing the fish I started a potof  rice and baked up asparagus.  Yes, I said I baked the asparagus.  I usually steam it but I saw a cooking show where they baked the asparagus and I liked it.  I covered a baking sheet with aluminum foil.  I cut off the bottoms of the asparagus and spread them out onto the baking sheet.  I drizzled them with olive oil and salt and baked them at 350 degrees for about 15-20 minutes.  After I put the asparagus in the oven I began preparing the fish.

Great, healthy dinner and everyone loved it.  And guess what, after eating their fish they all started eating mine!  Luckily I had enough leftovers for lunch for tomorrow!
